Will it be chicken??
Yes chicken, but how or with what? Ugh… I need to plan better… I’ve barely had my coffee and I am trying to solve the “What’s for dinner” question. (Update: I’m really tying to nail this SAHM mom thing down. I’ve gotten better at planning since this post first published, but I thought I would come back an give this one an update).
I’ve been away from the blog for about two weeks!! Ahhh! I completely hate that! Life is busy and as a busy mom of three, it is hard to get everything done, planned, or ready to go for the week. But I am determined!
So I’ve been crafting up ways to make my life more efficient! To run a smooth household of 5 (as best as possible). And I am in the process of tweaking little things within our house and daily routines to make it better including this chicken and rice casserole recipe!

Now that the twins are pretty much eating the foods we all eat on a regular basis I am able to start to make meals that all 5 of us can eat (meaning the same foods for the most part) and plan out our meals and lunches for the week so that I can avoid the question of “what’s for dinner” come Monday Morning! Â So over the next few weeks I am hoping to gather up some good recipes and share my prep and planning process with you. And I am no cook- or should I say… I don’t really know how to cook – except for the basic basics, so this will have to be easy… Easy for this momma of three! Wish me luck!
For now… And for dinner tonight it will be one of my “go-to” recipes, (Or should I say, One of the Hubs go to recipes). It’s a quick and easy chicken bake everyone loves!
Chicken And Rice Casserole Recipe!
It’s simple… You basically only need a few ingredients:
Chicken Breats 3-5 depending on your family size ( I do 4 and cut them up) I love love love to use Zaycon Fresh for all of our chicken. You can get amazing deals on chicken and purchase 40 pounds at a time and freeze. This makes for less mess and fuss when grocery shopping each week, because you will most likely always have chicken on hand!
Rice (whole wheat is better but white is fine)
1 can of cream of mushroom soup
3/4 cup of Shredded Cheese (I use Colby jack)
Steps:
Cook your chicken in a pan, and boil your rice in a pot. Once both are done, add the rice to a casserole baking dish (I love using my Corningware dish for this), add in the cooked chicken (cut up into chunks) pour the cream of mushroom soup into dish, and cover the top with the shredded cheese. Bake on 350 for about 20 minutes or until the cheese is melted.
